Ingredients

150g firm tofu, cubed

1 red onion, cut into chunks

1 cucumber, cut into chunks

1 red bell pepper and 1 yellow bell pepper, deseeded and cut into chunks

Few sprigs of coriander, sliced

Coconut oil

Black pepper and salt

To serve with tortilla wraps, pita or flatbread (optional)
Marinade

2 tbsp light soy sauce
-
1 tbsp dark soy sauce
-
3 tbsp of Linghams' Garlic Chilli Sauce

2 tbsp garlic paste
-
1 tbsp tomato puree/ketchup
-
1 tsp sesame oil
-
1 tsp maple syrup

Wooden or metal skewers

Hot griddle pan or barbeque or grill
Method
- First, prepare the marinade. In a large bowl, mix the marinade ingredients until smooth. Add the tofu and make sure they are fully coated all over. Set aside for at least 30 minutes.
- Carefully thread the tofu, cucumber, bell peppers and red onion alternately onto 4-5 long skewers and coat them lightly with coconut oil.
- Grill the skewers for 8-10 minutes, turning occasionally until the vegetables are soft and lightly charred on the edges, and the tofu are golden in colour.
- Sprinkle coriander and drizzle more of Linghams' Garlic Chilli Sauce.
- Serve immediately on its own or with pita, flatbread or tortilla wraps.
