Lia's Asian Style Sweet Chilli Meatballs

A healthy, tasty and satisfying Asian-style meatballs recipe with a sweet chilli sauce - the ultimate taste sensation, and guarantees a spicy kick!

Ingredients:

Meatballs 

  • 450g turkey mince (or any other ground meat / vegan mince you prefer)
  • 70g panko or breadcrumbs
  • 1 spring onion, chopped
  • 1 shallot, chopped 
  • 1 tbsp ginger paste
  • 1 tbsp garlic powder
  • 1 red chilli, chopped 
  • A handful of fresh coriander, chopped
  • Black pepper & salt

Sauce 

  • 2 tbsp soy sauce
  • 5 tbsp of Lingham’s Original Chilli Sauce
  • 2 tbsp lime juice
  • 1 tbsp fish sauce 
  • 1 tbsp sesame oil

Garnishing

  • 1 shallot, thinly sliced 
  • Sesame seeds

Method

  1. Preheat the oven to 180°C. Line a piece of baking sheet on an oven proof tray and lightly spray with some olive oil 
  2. In a large bowl, add the mince. Mix in the spring onion, shallot, ginger paste, garlic powder, red chilli and coriander and combine using your hands
  3. Slowly add in half of the breadcrumbs and mix again. Then add in the rest of the breadcrumbs to make sure all the ingredients are fully combined
  4. Roll around 3 tablespoons of the mince into 12-15 meatballs and place them half an inch apart on the prepared baking sheet. Cook in the oven for 20-25 minutes or until cooked through
  5. While the meatballs are in the oven, combine the soy sauce, Lingham’s Original Chilli Sauce, lime juice, fish sauce and sesame oil in a pan and heat until simmering 
  6. Using a spatula, remove the cooked meatballs and add to the sauce and mix them together until the meatballs are fully coated
  7. Garnish with thinly sliced shallot and sesame seeds. Serve over rice, quinoa or a green salad.
